IPA Key Lime Cheesecake

Makes one 8- or 9-inch cheesecake

  • 1 ½ cups crushed graham crackers or other cookies of your choice
  • 6 tablespoon butter, melted
  • Juice and zest of 1 lime
  • Juice and zest of 1 lemon
  • ¼ cup sugar
  • ½ cup Evolution Craft Brewing Hops Limon IPA
  • ½ cup powdered sugar
  • 1 teaspoon vanilla
  • 16 ounces cream cheese, softened
  • 2 eggs
  1. Preheat oven to 350°F.
  2. Mix together the crumbs and butter and press the mixture into a pie plate or bottom of a springform pan.
  3. Bake for about 10 minutes, then cool.
  4. Using a mixer, blend together all of the ingredients except for the eggs.  Once the mixture is well mixed together, add the eggs one at a time and mix until well incorporated.
  5. Pour mixture into pie crust. Bake for 40 minutes until mostly set but the center is slightly jiggly.
  6. Remove from oven and let cool for 20 minutes. Refrigerate for at least 3 hours before serving.
  7. Garnish with additional grated lemon or lime zest if desired.
